Rocky Road Brownies


Oh man, how awesome do these look?! Fudgey brownies topped with chocolate chips, salted peanuts, and marshmallows! The recipe was adapted from Sweet Pea's Kitchen. I couldn't believe how easy they were to make, too! These cut into 12 fairly large bars, but you can definitely downsize too.

Rocky Road Brownies makes 12 large brownies

  • 1 stick (8 tablespoons) unsalted butter
  • 1/3 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1 teaspoon espresso powder
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon table salt
  • 1 cup miniature marshmallows
  • 1/2 cup roasted, salted peanuts
  • 1/2 cup semi sweet chocolate chips
Preheat oven to 350 degrees F and grease a 8x11" pan. Melt butter with cocoa powder in a large microwavable bowl in the microwave, stopping and stirring every 30 seconds until smooth. Mix in sugar, espresso powder, and vanilla.

Beat in eggs one at a time, mixing until well combined. Add flour, baking powder, and salt and mix until batter is smooth. Spread batter in pan and smooth top. Bake for 20-25 minutes, until brownie starts pulling away from the edges of the pan. Cool for 20 minutes in pan on a wire rack.

Sprinkle marshmallows, chocolate chips, and peanuts. Broil in oven just until marshmallows are golden, about 2 minutes. Cool completely before cutting. Best if warmed before eating. :)
